The most interesting part of my current path is the discoveries of all the good in the world, that we have options, that there are people out there working so hard to bring us the good. The most intriguing part is how those closest to us listen the least.

 So today we talk about kidney stones, something a dear friend has just told me he is experiencing approximately every 3 years. Other articles have been about cancer and other issues, from which a few I know suffer. Today I ASK YOU TO LISTEN. Coconut has no negative effect on us, only good effect – so what can you lose by trying it? It has to be easier than the pain I see you all going through and, at the very least, it will improve SOMETHING, which has to be a better place than where you are now.

“Urinary & Reproductive Systems

Coconut water has long been known for its therapeutic effect on the urinary and reproductive systems. It is reported to clear bladder infections, remove kidney stones and improve sexual vitality. Medical research has shown consumption of coconut water to be very effective in dissolving kidney stones. (ref: Macalalag, E.V., Jr. and Macalalag, A.L. Bukolysis: young coconut water renoclysis for urinary stone dissolution Int Surg 1987;72(4):247). Dr Eugenio Macalalag, director of the urology department at the Chinese General Hospital in the Phillipines, says that coconut water has demonstrated its effectiveness in patients suffering from kidney and urethral stone problems. His patients have even been able to suspend dialysis treatment after regular oral intake of coconut water. In the Phillipines coconut water is commonly known as buko juice. Dr Macalalag has also reported success in patients by directly infusing the water into the kidneys. He calls the treatment bukolysis. A saying that has now become popular in the Phillipines is: ‘A coconut a day keeps the urologist away’.

Coconut water injected through urethral catheters inserted up to where the stones are lodged (bukolysis) has resulted in significant daily decrease in size, disintegration of the stones, and expulsion without the need for surgery. Even by oral intake coconut water, taken 2 or 3 times a week, has been observed to result in significant size reduction of kidney stones within a short time. Macalalag reports that, of his 1,670 patients who were recurrent stone formers and who took buko therapy, only 13 percent had recurrence of stones in a 10-year period, and the stones were small and passed out easily. Coconut water therapy is so effective that kidney stone patients are spared going through expensive medical procedures. Dr Macalalag jokingly complains that because of this he has suffered from … “acute income deficiency syndrome”.

Coconut water is a natural diuretic so it increases urine flow. This helps to dilute the urine so that stones are less likely to form and helps to flush existing stones out. It is also helpful in preventing bladder infections.

Not only does coconut water clean out the urinary tract, it revitalises the reproductive system. Coconut water from fresh green coconuts is reputed to increase libido and enhance performance. No need for Viagra here; coconut water will keep you young and virile”

So there’s an added benefit you may not have expected – or maybe a warning for those who already have all the children they planned for!

Drink 16 ounces (0.473 litres) or more a day of coconut water. In addition, consume at least six 8-ounce (0.236 litres) glasses of pure water and 1 teaspoon of sea salt daily. Salt can be added to food or water. Take a capsule of cayenne pepper with each meal.”

“We live in an environment teaming with microorganisms. They are in the air we breathe, the food we eat, the water we drink, and even live on our skin. Many of these germs cause disease. Bruce Fife has another wonderful book out called “Coconut Water for Health & Healing – A Natural Sports Drink and Health Tonic”. As coconut water is getting more into the everyday now, I thought I better hurry up and  tell you about it.

I lived in Malaysia for two years in the late 1990′s and they just lopped the top off the green coconuts and we would drink the coconut water and spoon out the clear flesh to eat – it was delicious! And so healthy.

Yes, this is a blog about all things coconut but this time, we have some other great news to share. Step 1 of the 8-step Alzheimer’s Battle Plan

“Ketone Therapy
The first step in the Alzheimer’s Battle Plan is to raise ketone levels. You do this by consuming at least 5 tablespoons (74ml) of coconut oil every day. Please note that a tablespoon is a unit of measurement and equals 14.8ml of liquid.The tablespoon referred to here is not the same as the tablespoon commonly used for eating. The oil should be taken with food. It can be used in food preparation or taken separately by the spoonful like a dietary supplement. Two tablespoons of coconut oil should always be consumed at breakfast. In the morning, ketone levels will beat their lowest, so this step is very important. The remaining 3 tablespoons can be divided up between lunch and dinner in any manner you desire….Just make sure you get at least 5 tablespoons spaced throughout the day. If a meal is skipped, it is a good idea to take a tablespoon of oil anyway to maintain ketone levels.

You can take more than 5 tablespoons of coconut oil a day. There is no harm in it but you will also be consuming other fats and oils in your diet as well. Be aware that consuming too much oil of any type can loosen the bowels, requiring multiple trips to the restroom.

Five tablespoons of coconut oil is recommended for treating those who have clear symptoms of neurodegeneration. For prevention, 2 – 3 tablespoons daily is adequate.

Taking 2 tablespoons of oil at one sitting can be difficult if it is not incorporated into a meal. Chapter 20 provides recipe ideas that make taking the oil relatively easy. See the Daily Dose of Coconut Oil section for ideas.

Before Starting the Program
Get a Medical Checkup
Regardless of your age or level of health, I recommend that you get a medical checkup before starting the program. The reason for this is partly to make sure you are physically capable of making a dramatic change to your diet but more importantly to get a record of your current level of health.

Record your blood pressure. Get your blood chemistries done so that you have a record of your fasting blood glucose level, high sensitivity C-reactive protein (hs-CRP), triglycerides, HDL, Total Cholestrol/HDL ratio and Triglyceride/HDL ratio…..

All of these measurements are needed in order to establish a baseline for comparison. After several weeks on the program you will have your blood work done again so you can compare results and evaluate your progress. This step is very important! It will provide you with the proof that the program is improving your overall health and that the increased fat you will be consuming is not causing you any harm, but is promoting better health. It also provides documented proof you can show to your doctor or to anyone who is skeptical about this program. These records will also help to encourage you to keep with the program and continue progressing and improving.

A common concern about replacing carbohydrates with fat and protein is how it is going to affect cholestrol levels. If you have read Chapters 12, 13 and 14, then you know this is not a problem. Cholestrol numbers will improve. All blood markers will improve. Memory will improve”

Once again, I (Megan) am astounded at, and grateful for, the wonderful information available to us. My mother had Alzheimer’s and is was very disturbing to watch a vital vibrant woman deteriorate like that – especially in the earlier stages when she showed quite clearly that she knew she was deteriorating and experienced the resulting frustration at not being able to express the words in her mind etc. Even though this information came too late for my mum, I feel comforted that I know how to stop this, and other awful diseases mistakenly credited to aging, from having any further hold in my life and my family.

From the book Cooking with Coconut Flour – A Delicious Low-Carb Gluten-Free Alternative to Wheat by Bruce Fife ND – page 74

One of Bruce’s favourite recipes. He says they are similar to macaroons but with a slight buttery flavour – yum!

½ cup butter
1 cup sugar
4 eggs
½ teaspoon vanilla
½ cup sifted coconut flour
2 cups grated or flaked coconut

Mix together butter, sugar, eggs and vanilla. Stir in coconut flour and coconut. Drop spoon-size mounds 1-inch apart on a greased cookie sheet. Bake at 375 degrees F (190 C) for 18 to 20 minutes or until golden brown. Remove from cookie sheet immediately and cool on wire rack. Makes about 2 dozen cookies.

Reduced sugar version
Reduce sugar to ½ a cup and add ¼ teaspoon of powdered stevia

Happy new year to all – I trust 2012 has been exciting for you so far. I actually had almost 2 weeks break over this Christmas period which was an absolute treat with all the family around! It was so good it is part of the reason I am returning a week later that I said I would – it took me a bit to get going again!

We have been busy with the submissions re coconut oil to the National Health & Medical Research Council (NHMRC) for the review of dietary guidelines. As we had so much info, we submitted the entire package early (at their request). We then contributed to the Infant Feeding guidelines with specific pathways to relevant information within the package in December 2011. And yesterday we submitted re Healthy Eating for Adults – just a cover letter directing them to the package but it required reading 288 pages to make sure it was relevant! So that finalises our submissions re coconut oil.

But next I wish to submit on the following. Please pass it on to anyone who may be interested.

Hi all – my name is Megan Knight of Natural Surrender.

I need your help, if you can. The public consultation period for the review of the Australian Dietary Guidelines is now on. I would like to collect comments on the guidelines – SPECIFICALLY about the posters and other ways the National Health & Medical Research Council (NHMRC) convey this information to the public.

The questions I SPECIFICALLY want to address are:

1) Do you agree with the pie chart (replaces the food pyramid)? Are these the correct proportions of how we should be eating?

2) Are these communications adequate? If not, how can we improve on them?

Is there space for misconceptions of this information – for example, the large grains section. Will those that eat incorrectly and /or have obesity or disease issues understand what is good for them? And discern what is bad for them? Will they see an unhealthy food item then look at the chart and say “yes, that’s on there”. Is there enough distinction between good foods and bad foods?

4) I will provide other forms of the food pyramid that I found online. Which ones do you think present the information the best? or can you improve on it?

Even though some discussion of “what needs to be changed and why” will be relevant, I REQUIRE POSITIVE SUGGESTIONS AND SOLUTIONS – I do not have time to read rants and raves about what is wrong with the system and I will only present solution-oriented information as this is what will get the attention of the NHMRC.

All information used will be credited with the author’s name. I will be submitting a compilation of many people’s thoughts and ideas and this will be properly reflected in the final submission. To those that submit, you will also receive a copy of the final submission from me once it is finalised

Creamed Coconut is pure coconut and contains no water. Unlike the canned milk/cream, it also contains all the fibre of the coconut. Pure, dried coconut contains even more fibre per gram than oat bran! This fibre has been stripped out of commercial coconut milks and creams. Have written before about the MAINTENANCE DOSE for coconut oil being approx 3 tablespoons a day. Today we provide more detail on that plus list the therapeutic dose as well.

This excerpt is from the book Coconut Cures – Preventing and Treating Common Health Problems with Coconut by Bruce Fife ND, pages 168 – 169

MAINTENANCE DOSE ie recommended daily dose for ongoing good health

175+ / 79+ = 4
150 / 68 = 3.5
125 / 57 = 3
100 / 45 = 2.5
75 / 34 = 2
50 / 23 = 1.5
25 / 11 = 1

This is a general guideline only – not an absolute rule. Take the amount that is comfortable for you.

Ways to consume coconut oil include straight from the spoon (one of my boys prefers this then follows up with a spoonful of yoghurt to help wash it down) or mix it with warm milk or food. Easiest way is to prepare your food with coconut oil – use coconut oil for frying and baking; put some in the pot when cooking rice, pasta, vegies etc. Definitely use it as your ONLY cooking oil. Every morning, I put 1 – 2 tablespoons in a cup, cover the round section of the spoon with boiled water then leave it to cool down to “warm”. As it is only a few mouthfuls, I then drink that down quickly and it is done.

Remember coconut oil goes solid at cool temperatures so for salads, mix it 50 / 50 with pure extra-virgin olive oil and the mixture will remain liquid.

Also use it as a body and hair moisturiser. By doing this, I ingest another tablespoon of oil every day as it soaks in through my skin, plus I have clear soft skin – easy! At first, I could only put the oil on when I was wet after a warm shower and my pores were open – applying it direct to dry skin at that stage left me all greasy. Now I am a few years down the track, I can apply the oil straight to dry skin and it soaks in beautifully

We also recommend that you do not consume all the oil at one time. Spread it out over the entire day or at least divide it in half, taking some at one meal and some at another. (When I first discovered these books, I got excited and leapt straight into taking 3 tablespoons every morning – only handled for a week and was queasy for most of it! And it was about 2 years before I could take coconut oil straight again – so be kind to yourself!) Start slow and work your way up.

THERAPEUTIC DOSE
In most cases, even when you are sick, 3.5 tablespoons of coconut oil per day is generally adequate. However, the anti-microbial affects of MCFA’s are accumulative, so the more you have in your body the more effective they are in fighting off infections. You can take twice as much if you feel the need but don’t take this amount all at once. A tablespoon or so taken every 2 – 3 hours is a good schedule to follow.Too much oil, any oil, if you are not accustomed to it will give you loose stools, so spread the amount throughout the day and eat it with a little food or beverage.

There is no danger of overdosing on coconut oil. Coconut oil is a food, not a drug. Human populations have consumed twice as much as the maintenance dose for years with no adverse effects. People working on serious health problems (including cancer and HIV) have taken 10 to 14 tablespoons a day and experienced no adverse side effects. Bruce Fife has personally taken up to 14 tablespoons a day without problem. I average about to 3-5 tablespoons daily and I feel great! If you take more than your body can handle, the worst symptoms you might experience are a runny stool and perhaps intestinal uneasiness for a time. To avoid this, simply reduce the amount of oil.

If you cannot consume the oil or any other food because of nausea and vomiting, apply the oil topically to the area that is most infected, as well as all over. Otherwise, it is a good idea to consume both internally and externally to take advantage of the oil’s healing properties. Massage it into the skin as well as eat it for double benefit.

Here is a great coconut slant on an old family favourite – pages 7 – 8, 58 and 90 – 91 of the book Coconut Lovers Cookbook by Bruce Fife ND

Being an American book, we have pounds and ounces occurring so I will translate to mls and kgs where I can

“Lasagne

1 pound (approx ½kg) ground beef
1 onion, chopped
6 cloves garlic, diced
2 x 8 oz cans (total approx 600 ml) tomato sauce
1 x 6oz can (230ml) black olives
½ tablespoon basil
½ tablespoon oregano
1½ teaspoons salt
⅛ teaspoon pepper
1 package (8-10oz or approx 350ml) lasagne noodles
2 cups Thick Cheddar Cheese Sauce (page 58)
2 cups mozzarella cheese, shredded

Brown meat, onions and garlic in skillet until vegetables are tender. Add tomato sauce, olives, basil, oregano, salt and pepper. Simmer on low heat for 5 minutes. Cook noodles in boiling salted water until tender: drain and rinse. Coat the bottom of a 13x9x2-inch (33×22.5×5-cm’s) baking dish with Aloha Nu Non-Stick Cooking Oil (page 8)… Layer one-third of the noodles on the bottom of the baking dish; add meat mixture on top of noodles. Layer another one-third of the noodles on top of the meat mixture; spread Thick Cheddar Cheese Sauce on top of noodles. Layer the remaining one-third of the noodles over the cheddar cheese followed by the mozzarella cheese. Top with croutons (recipe below). Bake at 375° F (190° C) for 35 minutes. Let stand 10 minutes before serving.

Croutons
Lightly toast 4 slices of bread in toaster. Spread with butter and sprinkle with garlic powder. Cut into small cubes.”

Aloha Nu Non-Stick Cooking Oil
Coconut oil is not as effective as other oils in preventing foods from sticking. “To improve the non-sticking property of coconut oil for frying and baking, you can mix another oil such as olive oil with coconut oil” (same for salad dressings 50/50 mix – keeps the coconut oil in a liquid form)

“The healthiest and most effective non-stick cooking oil I have found is a mixture of coconut oil and liquid lecithin… It’s the only oil I use to prevent foods from sticking… All you need is a thin layer to do the job. Store the remainder in the refrigerator. This combination is so effective, bread almost pops out of the pan… Once you begin to use this oil, you won’t want to use any other in your baking ever again…..available commercially” (USA, Canada & UK only at present – Megan investigating for Australia)

“Creamy Cheese Sauce
This is the basic cheese sauce recipe. Thick Cheddar variation below

3 tablespoons butter
2 teaspoons cornstarch
¼ teaspoon salt
1 cup coconut milk
1 cup shredded cheddar cheese (6 ounces)

Melt butter in saucepan over low heat. Mix cornstarch and salt in coconut milk and add to saucepan. Stir constantly until mixture thickens and bubbles. Remove from heat and add cheese, stirring until melted. Makes about 1½ cups. For thinner sauce, add more coconut milk.

Thick Cheddar Cheese Sauce
Follow the directions for the cheese sauce above but increase cornstarch to 4 teaspoons and cheddar cheese to 1¼ cups. This sauce is very thick and makes a good replacement for soft cheese in recipes.”
